My favourite way to incorporate more magnesium into my lifestyle are these delicious sweet potato brownies! Don't worry if you're still in the savoury-only sweet potato camp - I promise this recipe will have you switching sides in no time ;)

Sweet Potato Brownies

Ingredients:

  • 1 large sweet potato (about 1 cup, mashed)

  • 1/2 cup butter

  • 1/2 cup cacao powder

  • 1/3 cup maple syrup

  • 1 tsp vanilla extract

  • 2/3 cup flour (either oat or almond, both delish)

  • 1/2 tsp bicarb soda

  • 1/4 tsp sea salt

  • chopped pecans to sprinkle on top

  • cacao chips to sprinkle on top (I use Cacao Collective Ceremonial Cacao)

Instructions:

  1. Preheat your oven to 160°C and line a baking dish with baking paper.

  2. Peel and cube the sweet potato, then steam or boil until soft. Mash until smooth.

  3. In a large bowl, combine the mashed sweet potato, butter, cacao powder, maple syrup and vanilla. Mix well.

  4. Add the flour, bicarb soda, and sea salt. Stir until fully incorporated.

  5. Pour the batter into the prepared baking dish and sprinkle pecans and cacao chips on top

  6. Bake for 25-30 minutes or until brownie is no longer jiggly if you nudge the dish.

  7. Allow the brownies to cool completely before cutting into squares.
